1. Avocado
Avocado contains vitamin E, an antioxidant nutrient that helps protect cells from oxidative stress. It is also rich in unsaturated fats, which make it a satisfying and useful addition to a balanced plant-based diet.
Its creamy texture makes avocado easy to use well beyond toast. Blend it into a dressing, add it to a grain bowl or mash it with lime, herbs and a pinch of salt for a simple dip.
Try it: Add sliced avocado to a salad with red peppers, lentils and fresh herbs for an easy combination of colour, texture and nutrients.
2. Berries
Blueberries, strawberries, raspberries and blackberries contain a variety of naturally occurring plant compounds, including anthocyanins, the pigments responsible for many of their deep red, blue and purple colours. Berries also provide vitamin C, with the amount varying between varieties.
Vitamin C contributes to normal collagen formation for the normal function of skin. It also acts as an antioxidant, helping to protect cells from oxidative stress.
Fresh berries are lovely when they are in season, but frozen berries are just as convenient and make it easier to enjoy them throughout the year.

3. Walnuts

Our bodies cannot make essential fatty acids, so we need to obtain them through food. Walnuts are a particularly convenient option because they require no preparation and work in both sweet and savoury dishes.
Try it: Sprinkle chopped walnuts over breakfast, add them to salads or blend them with basil, lemon and olive oil to make a simple vegan pesto.
4. Sweet potatoes
The vibrant orange colour of sweet potatoes comes from beta-carotene. The body can convert beta-carotene into vitamin A, which contributes to the maintenance of normal skin.
Sweet potatoes are also a source of fibre and can form the base of an easy, filling meal. Keeping the skin on, after giving it a good scrub—adds extra texture and reduces food waste.
Because beta-carotene is fat-soluble, serving sweet potatoes with a source of healthy fat, such as tahini, avocado or a drizzle of olive oil, helps the body absorb it.
Try it: Roast sweet-potato wedges with smoked paprika, or bake a whole sweet potato and fill it with chickpeas, greens and tahini dressing.
5. Red peppers
Red peppers are packed with vitamin C, an important nutrient for normal collagen formation. They also contain carotenoids, including beta-carotene, and their natural sweetness makes them an easy way to add more colour to a meal.
